Choc-chip Cookies
Ingredients:
- 150g softened butter
- 1/2 cup caster sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 egg
- 1 3/4 cups plain flour
- 1/2 dark chocolate chips
- 1/2 cup milk chocolate chips
Method:
- Preheat oven to 180 degrees or 160 fan force
- Line 2 baking trays with baking paper
- Use electric mixer, beat butter, sugars and vanilla for 1-2 minutes or until smooth
- Beat in egg until combined
- Stir in flour in 2 batches
- Stir in dark and milk choc chips
- Roll mixture in small balls, place on trays and flatten slightly with palm
- Ensure each is 3cm apart, Decorate with extra choc bits
- Bake for 15-18 minutes or until light golden and cooked
- Transfer to wire rack to cool
- Store in airtight container for up to 1 week
Rainbow Cookies
Ingredients:
- 250g softened butter
- 1 cup brown sugar
- 1/2 cup caster sugar
- 3 tsp vanilla extract
- 2 egg
- 2 3/4 cups plain flour
- 1 tsp baking powder
- 200g packet chocolate freckles
Method:
- Preheat oven to 180 degrees or 160 fan force
- Line 2 baking trays with baking paper
- Use electric mixer, beat butter, sugars and vanilla until light and fluffy
- Add eggs, 1 at a time, beating until well combined
- Sift flout and aking powder over butter mixture
- Using wooden spoon, stir until combined
- Roll mixture in small balls, place on trays and flatten slightly with palm
- Ensure each is 2cm apart to allow room for spreading
- Place 1 freckle on top of each cookie
- Bake for 12-15 minutes, swapping trays halfway, until light golden and cooked
- Transfer to wire rack to cool for 5 minutes
- Serve
Christmas Cookies
Ingredients:
- 125g softened butter
- 1/2 cup caster sugar
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups self-raising flour
- 1/2 cup custard powder
- silver and gold sparkling crystals
Method:
- Preheat oven to 180 degrees
- Line 2 baking trays with non stick baking paper
- Use electric beater to beat butter and sugar until pale and creamy
- Beat in milk and vanilla extract
- Fold in flour and custard powder
- Press dough into ball and wrap in plastic wrap
- Refrigerate for 30 minutes to rest
- Divide dough into manageable portions and roll out about 1 cm thick
- Use cookie cutters to cut shapes and place on trays
- Decorate with silver crystals
- Bake for 10 minutes or until light golden
- Cool for 5 minutes on trays then transfer to wire rack to completely cool
